Mackerel donburi

Ingredients

Marinade

  • 2 tbsp tamari (or soy sauce)

  • 3 tbsp mirin rice wine

  • 1 tbsp toasted sesame oil

  • 1 garlic clove, crushed

  • 1 tbsp grated fresh ginger

Dressing

  • 1 tsp wasabi powder mixed with 1 tsp water OR 1 tsp wasabi paste

  • 2 tbsp tamari (or soy sauce)

  • 1 tbsp rice vinegar

Mackerels

  • 4 mackerel fillets 

  • 1 tbsp sesame seeds

  • 1 packet microwave brown rice

  • 200g frozen soya beans (edamame)

  • 4 salad onions, sliced diagonally

  • handful fresh coriander, roughly chopped

Directions

  1. Combine all the marinade ingredients, pour over the mackerel and leave for 30 minutes.

  2. Mix all the dressing ingredients, set aside.

  3. In a frying pan, toast the sesame seeds for 1 minute, set aside. 

  4. Microwave the rice for 1 minute. 

  5. Cook the soya beans for 3 minutes in boiling water, drain.

  6. Preheat grill to high. Grill the marinated mackerel for 2-3 minutes on each side, spooning over any extra marinade when you turn the fish. 

  7. Stir the soya beans into the rice and divide between the bowls. Top each with a mackerel fillet and a handful of salad onions and spoon over the dressing.

  8. Scatter with sesame seeds and coriander leaves and serve immediately.
