Magic Granola
Ingredients
2 TBSP extra virgin olive oil
2 TBSP good quality maple syrup
3 cups quinoa flakes (order on Amazon or buy from health food shop)
3 cups oats (porridge oats)
Pinch salt
Flaxseeds or linseeds: either whole if you own a coffee grinder, if not, buy them already ground.
3 cups various nuts and seeds: almonds, walnuts, brazils, pistachio; pumpkin, sunflower and chia seeds

Method
Pre-heat oven to 400F.
Whisk olive oil and maple syrup in a large mixing bowl.
Add quinoa flakes, oats and salt and stir all together until evenly coated.
Spread into a thin layer across two or three baking trays.
Roast in oven, stirring every 7-8 minutes until all golden brown - about 20 minutes.
Meanwhile put linseeds into grinder and whizz until well broken up. Add the nuts and other seeds into blender and roughly chop so chunky or as you like.
Once oats/quinoa are cooled add to the mix and stir well.
Store in a tightly sealed container for up to 2 weeks.
Eat with yogurt and fresh fruit. Also makes a delicious desert baked over stewed fruit - like a crumble.
