Honey & Miso Salmon with Broccoli & Coriander

Serves 4

Succulent salmon fillets in a flavourful miso and honey sauce. Miso is excellent for gut health and with the addition with the broccoli, this meal is full of goodness (and super quick to make!).

Recipe from: Delicious

Ingredients

  • 1 tbs sesame oil

  • 120g runny honey

  • 3cm piece (15g) ginger, finely grated

  • 3 garlic cloves, finely grated

  • 125g white miso paste

  • 500ml veggie stock

  • 2 tbs lemon juice

  • 2 bunches tendertsem broccoli, trimmed (thick stalks halved lengthwise)

  • 4 x 250g boneless salmon fillets

  • 1/4 bunch coriander, finely chopped

  • 1 long red chilli, finely chopped

  • 2 tsp each white and black sesame seeds (optional)

  • Cooked rice, to serve

Directions

  1. Heat a large non-stick oven-proof frypan over medium-high heat. Add sesame oil, honey, ginger and garlic. Cook, stirring, for 1-2 minutes until fragrant. Stir in miso, stock and lemon juice. Bring to the boil.

  2. Turn the heat to low and add the broccolini followed by the salmon, skin side down. Spoon the sauce over the top of the salmon fillets to coat in the miso sauce.

  3. Place the lid on, with the heat low, and cook for 8-10 minutes until tender and cooked to your liking. To serve, scatter over the coriander, chilli and sesame seeds (if using) and serve with rice.
