The original and the best, the superfood salad from LEON

Super delicious, easy to make, full of superstar ingredients. A total winner. Enjoy. 

Serves 2

Ingredients

  • About 2 cups quinoa (see ‘Easy quinoa’ recipe)

  • Small head broccoli, cut into florets

  • 120g frozen peas

  • 1/4 cucumber, cut into slim batons

  • 100g feta

  • (If you have: handful alfalfa sprouts or cress)

  • 2 tbsp toasted seeds

  • 1 avocado, cut into pieces

  • Small handful chopped flat leaf parsley

  • Small handful mint, chopped

  • 2 tbsp lemon juice

  • 4 tbsp extra virgin olive oil

  • Salt and pepper

Directions

  1. Cook broccoli for 3 mins in boiling water, then run under cold water (to keep it green). 

  2. Layer ingredients in a large bowl: broccoli, peas, cucumber, feta, alfalfa, seeds, avocado, quinoa and finally herbs. 

  3. Add dressing just before you eat it.
